A Mexican-Indian fusion that brings together everything you love about both cuisines — in a warm, golden paratha.

 

Rolling out this paratha is like creating a little piece of culinary magic.

I've always loved how Indian and Mexican food share so much in common — bold spices, fresh herbs, the kind of flavours that make you feel warm from the inside out. This recipe brings those two worlds together in a way that just makes sense.This gluten free paratha has mashed avocado, fresh coriander, finely chopped onion, a squeeze of lemon stuffed into a golden (slightly green) paratha made with quinoa atta and cooked in avocado oil.

Why This Recipe Works

Avocados are rich in healthy fats, vitamins, and fibre — and they make one of the most satisfying fillings you can put inside a paratha. Paired with quinoa atta (higher in protein than regular flour) and cooked in avocado oil, every bite is genuinely nourishing.

How to Make Avocado Stuffed Paratha (Overview)



This comes together in 3 steps:

1. Make the Stuffing

Mash avocado and combine with onion, coriander, spices, lemon juice, salt, and a drizzle of avocado oil.

2. Make & Fill the Parathas

Prepare your dough with quinoa atta (or regular atta), roll out, fill with the avocado mixture, and seal.

3. Cook

Cook on a hot tawa with a drizzle of avocado oil until golden on both sides.





Tips for Best Results

  • Use ripe avocado — it should be soft and easy to mash

  • Don't overfill or the paratha will tear when rolling

  • Avocado oil works beautifully here but any neutral oil works

  • Serve hot with salsa and green chutney for the full fusion experience


Avocado Stuffed Paratha

Prep Time: 15 minutes   Cook Time: 15 minutes   Total Time: 30 minutes   Servings: 4–6 parathas



Stuffing

½ avocado, mashed

2 tbsp finely chopped onion

2 tbsp finely chopped coriander

Spices of your choice

Dash of lemon juice

Salt to taste

Drizzle of avocado oil

 

Paratha Dough

Quinoa atta (or regular atta) — enough for 4–6 parathas

Water, as needed

Avocado oil, for cooking

 

To Serve

Salsa

Green chutney







Instructions

  1. Combine all stuffing ingredients and mix well.

  2. Prepare paratha dough with your atta of choice.

  3. Roll out a portion of dough, place stuffing in the centre, seal, and roll out gently.

  4. Cook on a hot tawa with a drizzle of avocado oil until golden on both sides.

  5. Serve hot with salsa and green chutney.


Notes

  • You can also use khapli atta which is an ancient grain originally from India or any atta works!

  • Serve immediately for the best texture

  • Add chilli flakes to the stuffing for more heat
