Dubai Chocolate Cake

A birthday cake with layers of decadence, made simple.

I made this to celebrate my 31st birthday, and it turned out to be one of those cakes that looks far more complicated than it actually is. A soft oat flour chocolate cake, a rich chocolate mousse, and a luxurious pistachio frosting inspired by Dubai's iconic pistachio desserts, all layered together and finished with melted chocolate and chopped pistachios.

It is vegan, gluten free, and completely sugar free, sweetened only with monkfruit, and it still tastes like the kind of cake you would want on a special day.

Why This Recipe Works

The oat flour base bakes up soft and tender without needing any eggs or dairy, and the cocoa powder gives it a deep chocolate flavour on its own. What really makes this cake special is the pistachio frosting. Using a pistachio butter made from roasted pistachios and puffed quinoa, sweetened only with monkfruit, gives the frosting that iconic Dubai chocolate flavour without any added sugar or preservatives.

How to Make Dubai Chocolate Cake (Overview)

This comes together in 3 simple steps:

1. Bake the Cake

Whisk the wet and dry ingredients together, pour into a lined pan, and bake until a toothpick comes out clean. Let it cool fully.

2. Make the Mousse and Frosting

Prepare the chocolate mousse, then whisk together the pistachio butter and non-dairy yogurt for the frosting.

3. Layer and Finish

Stack the cake with the mousse and pistachio frosting, then top with melted chocolate and chopped pistachios.



Tips for Best Results

  • Let the cake cool completely before frosting, or the layers will slide

  • Taste your pistachio frosting before assembling, and add a little sweetener if your yogurt is unsweetened

  • Chill the assembled cake for a short while before slicing for the cleanest layers

  • Save a few extra chopped pistachios for the top, it makes all the difference visually

Dubai Chocolate Cake

Ingredients

Oat Flour Chocolate Cake — Wet

1/2 cup + 2 tbsp water

1/2 cup non-dairy milk

3 tbsp oil

1/2 cup monkfruit or any granulated sweetener of your choice 

1 tsp vanilla extract

Oat Flour Chocolate Cake — Dry

1½ cups oat flour

1 cup cocoa powder

1 tsp baking soda

1/4 tsp salt

Pistachio Frosting

250g Dubai pistachio butter (from Asmita Organics)

200g soya or any non-dairy yogurt

Optional sweetener, if your yogurt is unsweetened

To Finish

Chocolate mousse (see notes)

Melted chocolate

Chopped pistachios

Instructions

  1. Preheat oven to 175°C and line a 9×13 pan.

  2. Whisk the wet ingredients together in one bowl and the dry ingredients in another, then combine.

  3. Pour the batter into the prepared pan and bake for 30–45 minutes, until a toothpick comes out clean.

  4. Let the cake cool completely before assembling.

  5. Whisk together the pistachio butter and non-dairy yogurt until smooth, adding sweetener if needed.

  6. Layer the cooled cake with the chocolate mousse and pistachio frosting.

  7. Finish with melted chocolate and chopped pistachios on top.

Notes

  • For the chocolate mousse layer, use your favourite simple vegan chocolate mousse recipe

  • Store in the fridge and bring to room temperature for about 15 minutes before serving for the best texture
