If you've been on the internet in the last year, you've seen the Dubai chocolate. The green pistachio filling, the crunchy kataifi, the rich chocolate shell — it became a sensation for a reason. And while I love a good chocolate bar, what I really wanted was that pistachio filling in a form I could spread on everything.
This Dubai Chocolate Inspired Pistachio Butter is that recipe. It's made entirely from scratch, uses no refined sugar, and gives you two layers in one jar — a creamy pistachio butter and a rich chocolate pistachio layer — that you can swirl, layer, or bottle and eat separately. It's a weekend project that's absolutely worth it.

Why This Recipe Works
The combination of pistachios and cashews isn't accidental. Pistachios bring the flavour and that signature green colour. Cashews bring an extra creaminess and bulk that makes the butter easier to blend and gives it a more scoopable consistency. Together, they create a base that's rich without being heavy.

How to Make Dubai Chocolate Pistachio Butter (Overview)
This recipe comes together in 3 simple steps:
1. Toast & Blend
Toast 2 cups each of pistachios and cashews at 175°C for 8 minutes. Let cool slightly. Grind into a coarse powder and blend until creamy. Add stevia if using.
2. Create Two Layers
Divide the pistachio butter into two equal portions. Stir 1/4 cup of melted sugar-free chocolate into one portion and mix until combined.
3. Layer & Store
Spoon alternating layers of plain pistachio butter and chocolate pistachio butter into a jar. Store and enjoy straight from the jar.
Tips for Best Results
Toast the nuts but don't over-brown them — 8 minutes at 175°C is the sweet spot
No wet grinder? Keep blending in a food processor or regular grinder — it takes longer but works
The two layers can be swirled together or kept distinct depending on how you layer them
Use a wide-mouthed jar for easier layering and scooping
Let the chocolate layer cool slightly before mixing so it doesn't split
You Can Also Try Thandai Pista Butter!

Combine 1/4 tsp each of saffron, fennel seeds, cardamom, and white poppy seeds with 1/8 tsp black pepper and 1/2 cup stevia.
Blend into a fine powder. Slowly fold this into the pistachio butter and mix until fully combined. Transfer to a jar and finish with dried rose petals.

Ingredients
2 cups pistachios 2 cups cashews 1/3 cup stevia (optional) 1/4 cup sugar-free chocolate, melted
Instructions
Preheat oven to 175°C. Spread pistachios and cashews on a tray and toast for 8 minutes. Cool slightly.
Grind the nuts into a coarse powder in a blender or food processor.
Continue blending until you get a smooth, creamy butter. Add stevia if using and blend to combine.
Divide the pistachio butter into two equal portions.
Stir melted sugar-free chocolate into one portion until fully combined.
Layer plain and chocolate pistachio butter alternately into a jar.
Seal and refrigerate.
Notes
Refrigerate for up to 2 weeks
The chocolate layer may firm up in the fridge — let it sit at room temperature for a few minutes before scooping
Swap cashews for more pistachios or macadamia nuts for a different texture
