A chilled, gentle kheer made for the people you want to take care of.
I made this for my mom when the Mumbai heat really got to her. She had come back from her evening walk feeling dehydrated and uneasy, with some stomach cramps setting in, and I wanted to put together something that would cool her down, hydrate her, and be genuinely gentle on her gut, not just another sweet dish.
Ice apples, or tadgola, are one of those quiet summer blessings. They are naturally cooling and hydrating, rich in electrolytes, easy to digest, and known to help soothe acidity and inflammation, which made them the obvious choice here.

Why This Recipe Works
I chose coconut sugar over stevia or monkfruit for this one very deliberately. While those are popular sugar alternatives, they can sometimes have a mild laxative effect, and when someone’s stomach is already uneasy, that is the last thing you want. Coconut sugar keeps things soothing rather than stimulating, which matters far more here than being completely sugar free.

How to Make Ice Apple Kheer (Overview)

This comes together in 3 simple steps:
1. Roast and Simmer
Roast the millet or vermicelli briefly, then simmer it in nondairy milk with coconut sugar, cardamom, and salt until it doubles in size.
2. Cool
Let the kheer cool uncovered to reach your desired consistency, stirring in roasted nuts and dry fruits near the end.
3. Chill and Top
Refrigerate for a few hours, then top with fresh chopped ice apples before serving.
Tips for Best Results
• Roast the millet or vermicelli just until fragrant, not browned, so it doesn’t turn bitter
• Cook the kheer covered while it doubles in size, then uncover it to cool and thicken to the right consistency
• Add the ice apples close to serving time so they stay fresh and crisp
• A few hours in the fridge makes a real difference to how soothing this feels to drink
Ice Apple Kheer

Ingredients
1 cup millet or regular vermicelli
2 cups nondairy milk
1/4 cup coconut sugar
1/2 tsp cardamom powder
Pinch of salt
Roasted nuts and dry fruits, chopped, to taste
2–3 fresh ice apples (tadgola), chopped
Instructions
1. Roast the millet or vermicelli in a pot for a few minutes, then set aside.
2. In a larger pot, bring the nondairy milk to a boil.
3. Add the coconut sugar, cardamom powder, and salt, and stir until well combined.
4. Add the roasted millet or vermicelli, cover, and cook until it doubles in size.
5. Uncover and let the kheer cool to your desired consistency.
6. Stir in the chopped roasted nuts and dry fruits a few minutes before it finishes cooking.
7. Let the kheer cool slightly, then refrigerate for a few hours to chill.
8. Top with fresh chopped ice apples before serving, or stir them in while refrigerating.
Notes
• Coconut sugar is used here instead of stevia or monkfruit, as it tends to be gentler on a sensitive stomach
• Best served well chilled, especially during a heat wave
