Walnut Banana Fudge

You know those bananas sitting on your counter, way too ripe to eat but too good to throw away? This is exactly the recipe for them!

I came across the idea for this one when I was looking for something that felt indulgent but didn't require me to turn on the oven or spend an hour in the kitchen. Four ingredients, a blender, and a freezer  that's genuinely all you need. And the result? Something so creamy and rich it tastes like it took effort. It really didn't.

It's also really similar to the iconic Lonavla fudge with that dense, melt-in-your-mouth texture, except this version has zero sugar, no dairy, and all the satisfaction

Why This Recipe Works

Walnuts are one of my favourite ways to sneak plant protein and healthy fats into something that tastes like pure indulgence. They're dense, they're rich, and when blended with ripe bananas they create a texture that's almost impossibly creamy.

  • Ripe bananas bring natural sweetness, no added sugar needed

  • Walnuts bring plant protein, omega-3s, and that fudge-like density

  • Sugar-free chocolate brings depth without the guilt

  • A little sweetener balances everything out (optional - the ripe bananas provide all the sweetness you need )

The whole thing sets in the freezer, slices cleanly, and keeps well. It's the kind of recipe that ends up on repeat.



How to Make Walnut Banana Fudge (Overview)

This recipe comes together in 2 simple steps:

1. Blend

Throw everything into a blender — bananas, toasted walnuts, melted chocolate, and your sweetener of choice. Blend until smooth.


2. Freeze & Slice

Pour into a silicone mould, top with more toasted walnuts for texture, and freeze for at least an hour. Demould, slice, and try not to eat the whole thing at once.






Tips for Best Results

  • The riper the bananas, the sweeter and creamier your fudge

  • Toast the walnuts before blending — it brings out a deeper, nuttier flavour

  • Use a silicone mould for easy demoulding

  • Freeze longer if you want a firmer texture

  • Store in the freezer and let it sit for a few minutes before eating



Walnut Banana Fudge

Prep Time: 10 minutes   Cook Time: 0 minutes   Total Time: 10 minutes + 1 hr freeze

Servings: 8–10 slices


Ingredients

12 small or 6–8 large ripe bananas

2 cups toasted walnuts

½ cup melted sugar-free chocolate (or regular chocolate)

¼ cup granulated sweetener of your choice (optional)


Instructions

  1. Blend together bananas, toasted walnuts, melted chocolate, and sweetener until completely smooth.

  2. Pour the mixture into a silicone freezer-safe mould.

  3. Top with more toasted walnuts for texture.

  4. Freeze for at least 1 hour (longer for a firmer set).

  5. Demould, slice, and enjoy!


Notes

  • The fudge softens quickly at room temperature so keep it in the freezer

  • Swap walnuts for any nut of your choice

  • Use refined sugar-free chocolate to keep it fully refined sugar free

  • Slice and freeze overripe bananas for this recipe anytime. They may turn black after thawing, but that’s just oxidation.
